Mohamed “Mido” Alaa, began his culinary career in 2014 with a particular interest in Italian cuisine. After learning under the guidance of executive chef Paulino Alves at Scalini in London, Mido became a founding team member of Scalini in Cairo. This year, he takes over the kitchen as Head Chef with a vision to develop his own take on refined Italian dining.
